How to make a lava cake

Topping the cake with ice cream helps cool it down faster and allows you to enjoy faster.

Baking a cake may look easy but for some could be very difficult. There are many different techniques and tricks. Today this article will show you the easiest way on how to make a lava cake. 


There are many extravagant ingredients that you could add to your cake to be a taste “better.” However, here are some of the simpler ingredients that make your cake twice as good.  First, you will need a ramekin or muffin pan. A ramekin is a small glazed ceramic, plastic, stainless steel or glass bowl used for cooking and serving various dishes. You will need  5 tablespoons unsalted butter and softened, for greasing ramekins,2 tablespoons granulated sugar ¼ cup heavy cream, and 1 ¼ cups dark chocolate chip. Also, you will need 2 large eggs 2 large egg yolks, ⅓ cup light brown sugar, ½ teaspoon kosher salt. Lastly, you will need 1 teaspoon vanilla extract and 2 tablespoons all-purpose flour. 

Prepping the cake

Before we could start the actual process we need to prep our ramekins. You need to coat the inside of the ramekins with softened butter, then sprinkle with the granulated sugar. A technique that helps is tilting to coat completely the inside. Then set aside on a rimmed baking sheet. Don’t forget to preheat the oven to 425°F (220°C).

Making the Chocolate

The first step is heating the heavy cream to a boil over the stove. After it has come to a boil pour the cream over ½ cup chopped dark chocolate in a small bowl and let sit for 3 minutes. Then stir until the chocolate is melted and smooth. Lastly, refrigerate for at least 30 minutes. This could be kept in the freezer for about 3 months.

Creating the Batter

While that rests we can start working on the batter of the cake. You need to combine the remaining ¾ cup chocolate and the butter. Put in in the microwave each time for 30 seconds stirring after each interval. Do this until the chocolate is fully melted.

Now you can beat the eggs, egg yolks, brown sugar, salt, and vanilla with an electric hand mixer on medium-high speed until light and frothy, about 8 minutes. Then gently fold the chocolate mixture into the egg mixture, being careful not to deflate the eggs. Lastly, add the flour and fold to incorporate.

After the batter and ganache are ready to are able to separate it into the ramekins. The first step is dividing the batter in half. The put half of the batter into the ramekins add ½ tablespoon of the chilled ganache to the center of each ramekin. Lastly topping off the cake with the rest of the batter.

Bake Time

You need to bake the cake for 12 minutes. After the 12 minutes are up let the lava cakes rest then transfer onto a plate. To decorate the cake sprinkle powdered sugar and garnish it with berries. The last step is to cut, watch ganache the spill out and enjoy! Overall the cake takes an hour and 20 mins to make but only takes 20 mins to prep and 25 minutes to cook. Now that’s how to make a lava cake.

She also loves to travel the world and has traveled throughout Europe and ten other countries.  However, she hopes to travel to Australia and different islands in the future. When it comes to entertainment, Patel loves the show The 100. She is excited to be apart of The Declaration staff and to see what the future holds for her.
